Looks like a Russula sp. If you check out the Fungimap website https://fungimap.org.au/ they have a good bookshop with various reference books on sale as well as an online id guide. A Field Guide to Australian Fungi by Bruce Fuhrer is a good place to start. There are lots of sites online but a good place to check out and maybe join is Bowerbird.org.au where you can upload photos and other people can help id them (not just fungi but invertebrates, plants, birds, mammals etc.). Once they are identified they then get added as records on the Atlas of Living Australia. ALA.org.au which is another great resource.
