We have used some herbs from the garden before, but this is our first vegetable harvest. Sufficient broad beans to make Broad Bean, Leek, Goats Cheese and Mint Pasta. As I didn’t have a leek to hand, I used three of our shallots, and to deglaze the pan when it got too hot, I used about a tablespoon of lemon juice to cool it. I skipped the step of taking the skin off each individual broad bean, as ours were young and tender, and didn’t need this.
Neither of us were particularly fond of broad beans before tonight. Now we want to keep planting more broad beans so we have a constant supply for this dish. It was simple, quick to make and very delicious. .
